Comfort Food for the Winter Blues

Winter is notorious for being the main cause of runny noses and insufferable colds. Finding warmth and comfort during the winter season is a task that most people experience. One of the most common things people turn to for comfort is food, and fortunately, there’s such a thing as “comfort foods” specifically made to soothe the soul during the relentless winter. The following comfort foods are quick and easy to make, and should get you feeling better in no time!


Deep Dish Pizza

Everyone enjoys pizza, and one of the most popular forms of pizza is the deep dish that Chicago is well known for. It’s fairly easy to make, and is big enough for four servings.


  • 1 can of biscuit dough
  • 1 cup of marinara sauce
  • Pepperoni slices (optional)
  • Sliced olives (optional)
  • And finally 1 cup of shredded mozzarella cheese


  1. Cut each biscuit into 6 pieces, then place them on a glass or ceramic baking pan that’s been sprayed with nonstick spray.
  2. Cut the pepperoni slices into quarters and place them evenly around.
  3. Add your sliced olives and then one layer of sauce, about one cup that you add in little blops, do not cover the whole surface.
  4. Sprinkle lightly with shredded cheese.
  5. Bake at 325 degrees for 25 to 30 minutes.


Shredded Beef Enchiladas

  • 1 ½ 1b. of beef shoulder roast
  • 2 tbsp. of taco seasoning
  • 2 tbsp. of chili powder
  • 1 15-ounce can of green enchilada sauce
  • 1 tbsp. of  cornstarch, plus 3 tbsp. of cold water
  • 12 flour tortillas
  • 2 c. shredded Mexican blend cheese
  • Salsa, onions, cilantro, chopped tomatoes, and avocados for garnish


  1. Pour 1 cup of water into your slow cooker, then add beef roast. Sprinkle taco seasoning and chili powder, then cover and cook on low until the beef roast begins to tender. Shred with two forks.
  2. Bring enchilada sauce to boil, stir cornstarch and water until dissolved in a small bowl. Add enchilada sauce and reduce the heat to medium-low. Stir until it’s thickened, and remove it from heat.
  3. Preheat your heaven to 350 degrees, and grease a large casserole or baking dish. Spread half of the enchilada sauce at the bottom of your dish.
  4. Divide 1 cup cheese among tortillas, and top with shredded beef. Roll it tight and place them side by side in your baking dish. Top the other side with the remaining enchilada sauce and cheese.
  5. Cover your dish with foil and bake until the cheese is melted, which would be 1o to 12 minutes. Uncover and bake it for another 4 to 5 minutes. Top enchiladas with your toppings of choice and then enjoy!
